Cherry season is almost over, but before it goes, let’s make this incredible Gluten-Free Cherry Cobbler to celebrate the fruity goodness of summer! And to elevate this dessert, we find the best way to enjoy this seasonal cobbler is to top it off with some keto ice cream or fresh whipped cream.

Gluten-Free, Low-Carb Cherry Cobbler

A delicious & low-carb cherry cobbler made fresh with cherries and gluten-free ingredients. Enjoy it with some sugar-free ice cream or just eat it plain!

Ingredients

Topping

  • 1/4 cup coconut flour
  • 1/4 cup almond flour
  • 1/4 cup pecan halves or walnuts
  • 2 tbsps oat fiber replace with flax or more almond flour for gluten-free
  • 2 tbsps low-carb sugar substitute such as Splenda
  • 1/2 tsp cinnamon, ground divided per the recipe’s instructions
  • 3 tbsps butter cold and cut into small pieces
  • 1/3 cup heavy cream
  • 2 tbsps sour cream
  • 1 large egg

Filling

  • 3 cups cherries, fresh and pitted about 2 pounds
  • 8 packets stevia or equivalent 1/3 cup sugar substitute
  • 1/4 tsp almond extract
  • 1/4 tsp cinnamon

Instructions

Topping

  1. In a food processor, pulse almond flour, coconut flour, pecans, oat fiber, sugar substitute, and cinnamon until nuts are well ground.

  2. Add butter and pulse until mixture resembles a coarse meal.

  3. In a separate bowl, whisk heavy cream, sour cream, and egg.

  4. Pour into food processor and pulse just until combined.

  5. Remove dough, roll into a ball and pat flat on a plate.

  6. Cover with plastic wrap and chill 1 to 2 hours.

Filling

  1. In a medium bowl, toss cherries with 1/3 cup sugar substitute, almond extract, and 1/4 teaspoon cinnamon.

  2. Pour filling into an 8-inch square or round baking dish.

  3. Divide dough into 8 pieces and pat into disks about 3 across.

  4. Stagger biscuits over filling and bake cobbler in 400°F oven about 30 to 35 minutes, until topping is browned and cooked through.

  5. Serve with low carb ice cream if desired.
